My Review: I was blessed to be able to care for my parents over the last years of their lives. My father's health and mobility failed first following complications from a reaction to a medication. Shortly after his death my mother went down to her diabetes and heart problems. The time I spent with them is something I will treasure forever and never regret. Still there were days when I would think I couldn't move I was so tired, but realized I still had to prepare the evening meal. With different heath conditions and my multiple food allergies it was often more than one meal to prepare. Now with a sister who is temporarily having problems taking care of herself and keeping a house up I am once again looking for quick, easy and tasty meals. "The Family Caregiver's Cookbook - Easy-Fix Recipes for Busy Family Caregivers" offers numerous recipes for those with special dietary needs that are quick and easy. An example is the Beef Burgundy. I made it in the traditional way and it took hours, but Harriet Hodgson has shortcuts for a lighter, health friendly recipes that only took a fraction of the time, yet still had a superb taste. The Glazed Pork tenderloin took little time to prepare for the oven. check on it occasionally and you are still free to do other things or just sit and talk with the one you love. Harriet Hodgson has been where we are and has given us a treasure trove of easy to follow and prepare recipes. Every thing from breakfast to dinner. Main and side courses, even desserts.
